Since the bread pudding was so intense, I felt I needed to balance things out a bit. This is a mostly raw dish. It’s a slightly altered Vegan Yack Attack recipe for “Raw Creamy Basil Tomato Pasta.” The alterations make this dish not technically raw.
No dry or otherwise sun-dried tomatoes meant I subbed in a roasted red pepper and I ended up blanching the zucchini noodles in salt water to make them more pliable an noodle-ish. Other additions to the sauce include garlic scape, green onion, chive, chili pepper oil instead of flakes, and a little splish of balsamic.
End result: Super tasty. Love the raw cashew creaminess. Will definitely make again.
