Blueberry Peach Chia Seed Parfaits

I should note to anyone who wants to try this recipe that I ended up adding about a half cup or so additional coconut milk to thin out the chia seeds (<- wiki definition for those who’ve never heard of these little seeds before) after they chilled out overnight. A doubled batch is currently in the fridge because this recipe only yields about 1.5 parfaits as is.

These little guys are packed with omega 3 fatty acids, phosphorus, manganese, calcium, and potassium. Should be fun to experiment with this recipe.
